fucking buono pasta con zucchine e salsiccia


this recipe is right for one vegetarian who doesn't eat milk or pasta or sausage and one sausage, pasta, cheese eating non-vegetarian

First you take 1/2 a leak and slice it really really finely,  then two garlic cloves also sliced and diced finely.

Heat a ban and put in a 1/4 cup of water, on medium fry the leak and garlic. 

Dice into itsy bitsy pieces 2 zucchine with the skin on, and thow em in there.  The secret is to let it all fry together on medium always adding water so that it never burns

While your at it dice up a tomato and stick it in there too.

In the meantime boil a big pot of water, set the table, heat some bread, open a bottle of wine....I like to do "in the meantime" type of things

When you see that the zucchine is really soft and cook drizzle a few drops of olive oil,  like 2 or 3 drops and a teaspoon of sweet sea salt.

What I have learned about sweet sea salt:

At first it is a little difficult to use, because you need to adjust all of your salt portions.  And if you add too much, the first bite can seem salty....HOWEVER, sweet sea salt is not like other salt, and the salty taste doesn't burn or linger in your mouth.  So in reality you have much more freedom and less worry about salting your food.

Anyways...back to the succhine.  At some point stop using water to ensure the zucchine don't burn and start using skim milk, this givs the whole thing a creamy texture.  

When the zucchine are ready but still cooking on med low, add the pasta to the water and cut into small pieces a piece of fresh sausage that is roughly the lengh of you index finger.

Start to fry it up in a small pan until it is no longer pink, with a bit of olive oil and a shake of regular salt,  add in 1/3 cup of Stacchino cheese from the castelfranco market (or whatever local market is close to you) a few rings of freshly cut hot pepper.
Add in 4 tabelspoons of the zucchine mixture,  then the al dente cooked pasta. 

continue to heat for 4 or 5 minutes.

And vua lah

dinner.

the vegetarian eats the rest of the zucchine with maybe some yummy toasted bread, or grilled radicchio or something like that

and the non vegetarian eats the pasta.
