
Put in a big pan like 2/3 rds water. boil. Add thre cleaned potatoes with skin, and two leaks cut into hunks.
Boiling for like an hour adding some water every now and then. Add a tabelspoon of Sweet Sea Salt, I use Sale di Cervia "Il Sale Dolce" bought from the Cesenatico fresh fish market.
Whizz up with the hand whizzer into a creamy and then keep boiling for another 10 or 20 minutes till it reaches the density you like.
To serve, just serve. hot or cold
to serve to marco add a few swils of olive oil and 1 tabelspoon of creamy goat milk ricotta stirred in till it melts.
