Yummy Minestrone Fagioli Spinaci e Patate

This minestrone is damn yummy, the recipe was created when I had absolutely nothing in the house apart from frozen spinach (a staple that I almost always keep on hand), beans packed in water and a few potatoes.

The recipe is more of less like this, truthfully it was created a few days ago so I might forget or add ingredients, but it doesn't really matter, since the next time I make it I'm sure I won't have the exact same things on hand and I will need to modify anyway. Here for example I had some fresh cream of carciofi that I had prepared a few days earlier on hand in the fridge. I guarantee you I will never make creamed carciofi again :) So whatever :)


Begin by preparing a few things....

Peel and diced into small cubes 2 or 4 medium potatoes.

Boil a small pot of water - when the water boils throw in 4 or 5 sundried tomatoes not packed in oil. When they are rehydrated take them out of the water and chop them finely.

First, like all of my recipes... In a VERY large soup pan I let simmer 1/2 of a leak (porro) sliced finely with two thinly sliced garlic cloves. Throw in one tablespoon of creamed carciofi and about 380 grams of caned beans. ANy kind will do canellini, baratolli....if you have more than 380grams add more, if you have less add less.

When they have started to simmer, throw in the potatoes and add one tabelspoon of sweet sea salt, or more. Don't forget that sweet sea salt is your friend and that even if you add a little too much your body naturally adjusts to the taste so the food never tastes too salty.

Then add a few cups of water, bring to a boil.

When it has started to boil add the whole package of frozen chopped spinach. Then add the chopped rehydrated tomatoe and one tabelspoon of basilico and pepper. May also want to add a bit more salt, or wait, taste it and then see if it needs more.

Things that do no harm:
A few pieces of hot pepper or a few hot pepper flakes

Other veggies or mushrooms if you have them on hand

A pea sized amount of anchovy paste etc

This soup was damn yummy and healthy. Enjoy.
