Recipe for February Ricotta e Taleggio Salad


For 1 Marco or 2 regular men:

1 cup of fresh goat milk ricotta from the Castelfranco Tuesday Market

1 piece like the size of 2 fingers of fresh Taleggio also from the CF market

2 tomatoes cut in small pieces

(cook rapini....broccoli rape) and use like 3 or 4 cooked stalks cut up into bitsy pieces

a pieces the length of a finger of finely sliced then chopped leek  (porro)

10 finely diced mini onions (I use cippoline borettane sotto aceto balsamico) packed in balsamic vinegar

a big pinch of sweet sea salt

2 taggiasche olives chopped finely

1 pea sized amount of wasabi paste

1 finely copped garlic clove

a few swirls of olive oil

serve at room temperature with break or nachose or toasted tortillas
