chicken the man likes

chicken breast cut in 1/2 length wise
Mix 2 small cherry tomatoes, chopped, small pieces of red onion chopped a tiny bit of parsley, let simmer on low heat with a bit of oil

A small chopped hunk of parmeggiano, 2  tablespoons of ricotta and 3 pieces of spec bacon (already cooked) with salt and pepper 

a bit of rucola

mix the rucola, spec / parmeggiano mixture and onion mixture all together - stuff and roll the chicken with it and a bit of salt

beat an egg

dip the chicken rolls in egg then flour with a bit of salt and pepper too

heal oil on very low, put in chicken and cover - fry till golden brown on all sides and serve immediately
